If the single boundary-plane extending overhead in a room is called a ‘ceiling’, then this shop doesn’t have a ‘ceiling’.
Instead, off-centered wooden rings of different sizes are grouped onto six different height layers hiding the lighting fixtures and piping. The act of giving the ceiling six layers of depth tends to make the ceiling plane and height ambiguous as well as obscuring the lowness of original ceiling. As well, the circles link the elements that are divided in plan, the entrance area, counter seats, table seats and private rooms, creating a single space.
